This Father’s Day, Pete Campbell, acclaimed finalist from MasterChef Australia who won the hearts of the nation, partnered with Ezra Brooks to share his top tips on how to host a successful Father’s Day celebration.
The partnership saw Pete create some delicious recipes that combine Bourbon and BBQ’s to create Big Celebrations for beloved Father’s. These include a New Fashioned, Oyster Mushrooms with Bourbon Bearnaise and a Sticky Bourbon Glazed Pork Belly.
Today, he shares his top tips for preparing drinks and being an exceptional host while entertaining guests.
1. Know Your Guests
Understanding your guests' preferences is the first step to being a great host. Before the event, ask if anyone has any dietary restrictions or drink preferences. This way, you can ensure there’s something for everyone. It also shows your guests that you care about their comfort and enjoyment.
2. Prepare a Signature Cocktail
Having a signature cocktail can set the tone for your event and add a personal touch. Choose a drink that reflects your style or the theme of your gathering. For instance, an Australian summer BBQ might call for my refreshing twist on an Old Fashioned that I call a ‘New Fashioned’. I use Ezra Brooks Kentucky Straight Bourbon, Yuzu syrup, a couple of dashes of bitters and grapefruit oil. If it’s a big party, then pre-batch part of the cocktail if you can and just stir or shake it and serve it over ice (if required by the recipe) when your guests arrive.
3. Set Up a Self-Serve Bar
A self-serve bar can be a fantastic addition to your party, giving guests the freedom to mix their own drinks. Arrange an assortment of spirits, mixers, and garnishes in an easily accessible area. Include a few recipe cards for simple cocktails like whiskey sours to inspire your guests.
4. Keep It Cool
In the Australian heat, keeping your drinks cool is essential. Use plenty of ice and consider having an esky or two filled with ice to store extra drinks. Frozen fruit can also serve as a stylish and functional garnish, helping to keep drinks chilled without diluting them.
5. Pair Drinks with Food
To enhance the dining experience, consider pairing your drinks with the food you’re serving. Light, citrusy drinks like a spritz pair beautifully with seafood, while a robust red wine complements grilled meats. Don’t be afraid to experiment with pairings to find combinations that delight the palate.
6. Create a Relaxing Atmosphere
A relaxed atmosphere can make your guests feel more comfortable and welcome. Soft lighting, a good playlist, and comfortable seating can all contribute to a pleasant ambiance. Pay attention to the little details, like having enough napkins and glassware, to ensure your guests have everything they need.

As a host, your presence is key to the success of the event. Spend time with your guests, making sure to chat with everyone. Your warmth and attentiveness will make your guests feel valued and appreciated.

Preparation is crucial for a smooth event. Plan ahead by making a checklist of everything you need, from ingredients to glassware. Set up as much as you can before your guests arrive, so you can focus on enjoying the party rather than stressing over details.
